Sri Lankan Famous Milk Rice ,Ginger Sambal & Anchovies Sambal 3 in 1 Recipe
Milk Rice
Ingredients:
1 Cup Red Raw Rice
1500Ml water
150Ml Milk
salt to taste
Method:
Wash the rice a number of times with water until the water runs pure from the rice. Soak rice if you wish to support your cooking time.
In a large pot on high heat add rice and water. Bring rice to a boil then condense to a temperate cook (medium-low heat) and allow to cook for 20-30 minutes until almost all the water is fascinated. Next add the milk and the salt to taste. Mix all ingredients well and cook in at a low heat until the milk is fully absorbed. The rice should be very kind and the regularity of the rice should be creamy (kind of like a fixed rice pudding).
Although this rice is completely delicious on its own, it is traditionally served with Sambal/Anchovies sambal.
Anchovies Sambal
Ingredients:
1 Medium onion cut finely by hand
2 Tbsp red chili flakes
6 Pieces Anchovies
1 Medium Tomato cut finely by hand
Salt to taste
1-2 tsp lime juice (or to taste) - lemon juice can be substituted.
Method:
Add all ingredients and use a mortar and pestle to smash the ingredients depressed. If you do not have a mortar and pestle handy, put in a shatter proof bowl and gently pound with a heavy bottom bottle. Pounding the ingredients helps develop the flavour so this is a must. Taste for salt and lime juice and adjust as needed.
Ginger Sambal
Ingredients
7 Red Dry Chili
Salt to Taste
45 g tamarind pulp
1 Inch Ginger
1 Cup Coconut Flakes
1 Medium size Onion
Method:
Add all ingredients and use a mortar and pestle to smash the ingredients depressed.
